Crawfish Breakfast Martini




Preparation:In skillet, melt butter over medium heat. Add onions, celery, and bell peppers, saute' 3-5 minutes. Blend in flour and add half of cream. Stir until thickened white sauce Season to taste with pepper, salt, and Cajun seasonings, set aside. In mixing bowl, combine eggs, garlic, green onions, remaining whipping cream, and prepared white sauce. Whisk until eggs mixture is whipped, add crawfish tails. Season with salt, pepper, and Cajun seasonings. In large skillet, add egg mixture and cook until eggs are scrambled but not dry and overcooked.
Scoop eggs into martini glass and serve with Jalapeno Cheddar Biscuits.





Jalapeno-Cheddar Biscuits


Preparation:Preheat oven to 425 degrees F. Blend butter into floor until mixture is crumbly. Add cheese and jalapenos to mixture. Add buttermilk, stirring until mixture is moistened. Turn dough onto lightly floured surface, knead 3 times. Roll dough 2/3 inch thick, and cut into rough squares. Bake 10-12 minutes.
