Penn’s Gumbo

Ingredients
Roux
Gumbo
- 1 ½ Gallons Water
- 1 C Cooked Roux (or enough for desired thickness)
- 2 Ducks (prepared & cleaned – no pellets, etc.)
- 1 lb. Andouille-sliced
- 1 pt. Oysters
- 4 lg. Onions-chopped
- 1 Bell Pepper-chopped (no seeds)
- 2 Stalks Celery-chopped
- 2 Pods Garlic-pressed
To Taste
- Salt – Black Pepper – Red Pepper – Bay Leaves – Gumbo Filet
- ½ C Green Onions-chopped
- ½ C Parsley-chopped
