Santa Fe Shrimp

Jumbo Shrimp (10 count)
Poblano Pepper
Monterey Jack Cheese
Smoked Bacon
Eggs
Milk
Flour

Peel Shrimp, de-vein and butterfly
Julian Poblano Pepper
Shred Monterey Jack Cheese
Stuff Poblano Pepper and Monterey Jack cheese into shrimp and wrap with bacon. Dip Shrimp in Egg & Milk wash and cover with flour mixture. Fry in hot oil until golden brown.

Chipotle Dipping Sauce

Mayonnaise
Sour Cream
Chipotle Peppers
Chopped Garlic
Lime
Water

Mix all ingredients together adding cold water until desired consistency is reached.

Pico de Gallo

Onions
Tomatoes
Cilantro
Jalapeno Peppers
Lemon/Lime Juice
Salt

Chop all ingredients and mix together with Lemon/Lime juice and salt.
