Eggplant, Chicken & Tasso Casserole
Method:
Saute onions, bell peppers and garlic in butter.
Add eggplant and smother down until smooth. Add tasso, Rotel, chicken granules,
soy sauce and worchestershire sauce. Add ground chicken and cook about 20 mins.
Add crackers and mix thoroughly. Add green onion. Put in a baking dish and top with
bread crumbs and parmesan cheese. Bake in oven at 350 degrees for about 30 minutes
and bread crumbs are browned.
