Mozzarella Stuffed Chicken Breast w/ Fresh Herbs & Proscuitto

Clean and pat dry boneless skinless chicken breasts. Make a long slit in side to create an opening for the cheese. Slice 1/8 – ¼” piece of cheese and arrange inside chicken breast. Fold over chicken and cover with chopped herbs mixture of parsley and basil.
Wrap chicken with thinly sliced proscuitto. Cook over medium high heat with a little butter and olive oil combination.

In a separate skillet, heat olive oil and sauté onions for 3-4 minutes. Combine red and yellow grape tomatoes and caramelize. Season with salt and pepper. Cook a few minutes longer.
Serve on top of the chicken breast or use as a side dish.
