Piggly Wiggly of Opelousas
Fried Chicken & Spinach Wraps
Ingredients:
2 lbs. Boneless Skinless Chicken Breast
1-14 oz bag frozen Spinach
1-large onion
1-large green bell pepper
1-tbs. minced garlic
1-tbs. sugar
3-egg yolks
2-8oz bags Mozzarella cheese
2-tbs. Olive oil
2-tsp. Butter/margarine
1-8ct pack FLOUR tortilla shells (burrito size)
Begin by heating a large skillet or pan, adding olive oil and butter. Once pan is hot sauté onions, bell pepper and garlic, making sure you sprinkle with sugar. Add chicken and season to taste. Once chicken is completely cooked add frozen spinach. Once spinach is cooked, again season to taste and remove from heat. Add mozzarella cheese and let rest for just a few minutes.
While mixture is resting preheat vegetable oil for frying. (approx. 375 degrees) Spoon 1 heaping spoonful of chicken spinach mixture onto center of burrito shell leaving approx. 1 inch around the edge to allow for folding. Fold the sides of the shells inwards, towards the mixture and roll forward away from you. Seal the wrap with an egg wash! Fry wrap in hot oil for 1-2 minutes, drain and salt to taste!
