Crawfish Corn Macque Medallions
Ingredients
3 Large Eggplants
1 cup Flour
4 cups Buttermilk
3 cups Bread Crumbs
1 dozen Fresh Kernel Corn
2 cups Yellow Onions
1 cup Green Bell Pepper
½ cup Brown Sugar
¼ cup Granulated Sugar
½ Tbsp Cayenne Pepper
¼ tsp White Pepper
¼ tsp Black Pepper
1 tsp Garlic Powder
1 tsp Onion Powder
¼ cup Shrimp Stock
3 lbs Louisiana Crawfish Tails
1 cup Flour
1 cup Melted Butter
1 bunch Fresh Parsley, chopped
Method:
Sauté yellow onions and green bell pepper until vegetables sweat, add brown sugar, granulated sugar, cayenne pepper, white pepper, black pepper, garlic powder, onion powder, and shrimp stock. Simmer for five minutes. Mix together flour, and melted butter for a blond roux, whisk into avoid clumping. Make sure there the texture is smooth, add crawfish and cook down for five minutes. Add whole kernel corn and mix well. Simmer for three more minutes. Add chop parsley.
Dredge eggplant wheels in flour, buttermilk and breadcrumbs and fry at 350 degrees until golden brown.
Louisiana Sweet Potato Bisque
Ingredients
10 each Sweet Potatoes
½ gallon Chicken Stock
½ gallon Milk
½ gallon Heavy Cream
1 lb Brown Sugar
2 cups Diced Yellow Onions
1 cup Diced Green Bell Pepper
½ Tbsp Minced Garlic
½ Tbsp Cayenne Pepper
½ tsp Black Pepper
½ tsp White Pepper
½ tsp Onion Powder
½ Tbsp Nutmeg
1 Tbsp Cinnamon
Method:
Bake sweet potatoes at 350 degrees for 45 minutes. Place sweet potatoes through a ricer then set aside. Sauté onion and peppers 5 minutes, add garlic and chicken stock, brown sugar, and seasonings. Bring to a boil and reduce by half. Add milk, heavy cream and sweet potatoes and bring to a boil. Take soup of stove and strain through a china cap; add soup to a robo coup and puree. Add soup to a sauce pot and bring to a simmer and thicken with a blonde roux if needed (soup may be at desire consistency). Once at desired consistency, simmer on a low fire for 10 minutes.
