Crawfish Boil Frittata

Boiled potatoes, corn, onion, garlic, crawfish tails from a well seasoned boil-(you can add anything—shrimp, crab, bacon, etc.)
Chop well and fry like fried potatoes in a 10” skillet. Season to taste. Spray skillet with non-stick oil. Add chopped green onions and chilies.
Beat six large eggs. After potatoes have browned, stir in scrambled eggs. Mix throughout potatoes until evenly distributed. Bake in a 350 degree oven for 10 minutes. When eggs begin to set around edges, cover with shredded cheese and return to oven.
Frittata is done when cheese is melted and a knife comes out clean in middle of Frittata. Cut in wedges and serve. Garnish with your choice of fruit or vegetables.
Salad
Any prepared salad mix or fresh lettuces of your choice. Wisk together 2/3 olive oil and 1/3 flavored vinegar. Toss with greens. Serve with tomatoes on a bed of hibiscus.
Fruit & Yogurt
Blend flavored yogurt with fresh chopped fruit to raise flavor levels and give texture and color.
Sangria
Juice a blend of lemons, limes, and oranges. Add ˝ volume of water to juice. Sweeten to taste. Pineapple, peaches, apples, etc. are good mixed in this as well. Fill ˝ of a glass filled with ice with juice and top with your favorite white or red wine. Sparkling wines are great too! Garnish with fruit!
