Chicken Dijon with Tarragon

Ingredients:

2 Chicken Breasts
salt
pepper
1/2 cup sliced mushrooms
olive oil
1/2 pt. of sour cream
4 tablespoons of Dijon Mustard
2 tablespoons of Tarragon

Cooking Directions:

Cut 2 Chicken Breasts into strips. Lightly add salt and white pepper. Add 1/2 cup sliced mushrooms. Sauté in Olive Oil till it's almost cooked through. Add 1/2 pt. of Sour Cream. Then 4 tablespoons of Dijon Mustard. Finally, add 2 Tablespoons of minced fresh Tarragon.

Cook for 5-10 minutes over low heat. Serve over buttered poppy seed noodles. Garnish with Tarragon or Parsley

Frissee Salad

Ingredients

1 bag mixed Parisians salad greens
juice of 1/2 lemon
1/2 avocado
1/2 cup olive oil
salt
pepper
bacon bits
1 pouched egg

Cooking Directions

Emulsify lemon, avocado, and olive oil. Season with salt and fresh ground pepper, toss with greens. Top with fresh poached egg and serve. Garnish with stars fruit slice.
