Country Blackberry Cobbler

Batter:

Store bought Biscuit Mix

2 cups Fresh or Frozen Blackberry’s
1 cup  Sugar
1 Tbsp. Lemon juice
1/8 cup  Cold Water
1 Tbsp. Corn Starch

Place 2 cups berries, sugar and lemon juice in sauce pan. Cook for 5-8 minutes; mash berries and cook for 2 more minutes. Mix cold water and cornstarch in a bowl. Add to berries and cook for 4-6 minutes stirring constantly. Take off heat.

Prepare your biscuit mix as per drop biscuit instructions. Fold in ¾ cup sugar and set aside.

Place berry mixture in oven safe dishes. Top with biscuit dough and bake in 375 degrees oven until golden brown. (15 – 18 min.)

Serve with ice cream and enjoy.

Mardi Gras Salad

1/8 cup Shredded Carrot
1/8 cup Shredded Cabbage
1/8 cup Diced Cucumber
2 oz.  Shredded Cheddar Cheese
1 oz.  Croutons
½ head Iceberg Lettuce
4 oz.  Fried Crawfish Tails
1 diced Tomato
3 Tbsp. Ranch Dressing

Toss all ingredients; (except crawfish tails) place in bowl; top with crawfish tails and enjoy.
