Boil and shred 6 chicken quarters and set aside.
Using a large sauce pan:
Add in ˝ cup chopped bell pepper into sauce pan and cook for 10 minutes
Add in ˝ chopped onion to bell peppers and cook for 2-3 minutes
Add in 6 cloves of crushed garlic being careful not to burn garlic
Pour in 3 cups of beer
Add 4 cups chicken stock or broth
Add in 4tsp. salt
Add in 1-8oz. can tomato paste
Add in 1 tsp. cumin
Add 2 packs Goya Sazon
Lower heat and simmer. Pour into pressure cooker along with shredded chicken, 6 cups of uncooked rice and ˝ cup sweet peas.
Cook until the pressure cooker lets off steam, block steam, turn off heat, wait 15 minutes and serve.
